I sure miss some of the closed places to eat breakfast. I loved Bev's, Bettie Mae's, Eureka Truck Terminal, Stanton's and Carl's Diner. And there has not been many to replace them with a huge greasy cholesterol filled menu. But here is my take of the best right now:
10. Waterfront Cafe- Nice view!
9. Cutten Inn- The "Bomber" biscuit and gravy special.
8. Amiga's Burrito- Their Breakfast Burrito is really good!
7. Marie Calendar's- Been having $4.99 special for months!
6. The Double AA- Bar type atmosphere.
5. The Chalet House of Omelette's- Been around for quite sometime. If you are into omelette's, this is your place.
4. Amy's Delight- On Harris. Across from Fig's.
3. Mama's Kitchen- My buddy Perry's favorite.
2. Adel's- Nice clean place with pleasant workers.
1. Kristina's- Consistent and I suggest the Mexicana omelet, but they have a $6.99 steak and eggs that is really good too. Waitresses are really friendly.

Stuffed Potato in Henderson Center is amazing. She starts peeling and shredding your apples and potatoes for pancakes after you make your order. Well worth the wait. Like eating in Grandma's kitchen.
Hank: Gil's by the Bay is not in Eureka. I am not a huge fan of Golden Harvest Cafe. Maybe #11. Although I do like the one in Arcata. The Humboldt Honey Omelette.

Only tried Chalet when they were in McKinleyville. Not what I would call an omlet at all but a thin crepe fried egg wrapped around what you wanted in it. Not very good and a high price for it also.
Some of the people that were with me said that was how Chalet does their omlets as they go to the Eureka location. Not my fave at all.
Sadly, no one remembers Joy's Diner. Popular and housed in a few locations over time, the place was always packed. Loyal customers followed her constant moves-- in location and in print.
Two folks could split a breakfast easily-- and ridiculously cheap. That's what she served: breakfast, until closing at midday. Omelettes, fried eggs, biscuits and gravy, waffles, pancakes, french toast.
Joy didn't care about money too much. She put her paid receipts into a manila envelope on the wall while the bills went into another. Her accountant figured it out at the end of every year. When she needed to buy more food, she'd send a young employee down the road to the local corner store, saying, 'Buy some bacon. 4 packages. Don't get anything too expensive but don't go too cheap, either.' When he returned, the bacon went into the fry pan, the bill into the 2nd envelope, the employee back to peeling potatoes.
Folks will remember her unique advertisements. Written into ridiculously small type, she copiously detailed her family, friends, customers, births, travels, and ramblings of everything under the sun using run-on sentences befitting a Dr. Bronner's liquid soap bottle-- talking about everything except the Diner and the food.
When Joy was running the Diner, she worked hard doing it all. Except when she took her usual yearly trips down to Sunny Mexico-- often getting a burro for the secondhand clothing she'd bring to distribute to the poor. Her trips might be a month or two at a time; I think the diner stayed closed until she returned. How anyone could run a business this way was beyond me. But the food was good in a homecooked, plentiful, greasy-spoon kinda way.
Sadly, Joy's Diner went under when Joy went under, passing away.
Joy was a gem. As was Joy's Diner.
